Chicken Taco Lettuce Wraps

I love tacos. The combination of meat, cheese, sour cream and some sort of vegetable or bean situation is a must have on my regular meal schedule. Typically, these ingredients are enjoyed inside of a tortilla, but occasionally I want something a little lighter…

… and these chicken taco lettuce wraps are perfect for the days when you are craving those classic mexican taco vibes, but want to keep things on the lighter side. Plus, if you have leftovers or a rotisserie chicken on hand, they can be ready in just a few minutes!

Let’s get started…

Begin by dicing up about a cup of cooked chicken. This recipe will make enough for 8 lettuce wraps, but it can easily be cut in half or doubled. If you prefer another protein, these wraps are great with ground beef or steak too!

In addition to the protein, you will need a cup of rinsed black beans and sweet corn, 1/2 cup of diced tomatoes, 1/2 cup of shredded cheese, 1/4 cup of crumbled oaxaca or queso fresco, 8 large romaine leaves and some sour cream or taco ranch dressing.

To build your lettuce wraps, arrange the washed romaine leaves on a large plate. Try to choose solid leaves without rips or tears to make them easy to pick up. I also like to have a little taco ranch and salsa nearby for dipping.

Now start layering your ingredients! I like to start with a little drizzle of taco ranch or sour cream then I add the chicken and work from there. There is no wrong way to build these wraps. Sometimes, I add all of the filling into a bowl, mix it up and then scoop the filling into each leaf.

Once they are all filled up, sprinkle your cheese over top and then add a little more taco ranch…

These wraps are so crunchy and delicious and if you pick out some good, sturdy romaine leaves you can pick them up just like a taco! All of your favorite flavors are right there in a crisp, fresh little package that you will love.

Ingredients

  • 1 cup of chicken, cooked, seasoned, diced
  • 1 cup of black beans, rinsed
  • 1 cup of sweet corn, rinsed
  • 1/2 cup of tomatoes, diced
  • 1/2 cup of cheese (cheddar or mozzarella), shredded
  • 1/4 cup of oaxaca or queso fresco, crumbled (optional)
  • 8 large romaine leaves
  • sour cream or taco ranch dressing
  • salsa (optional)

Instructions

  • Dice cooked and seasoned chicken (leftovers or rotisserie chicken)
  • Arrange the romaine leaves on a large plate and add the filling
  • Enjoy with sour cream, taco ranch or salsa
