A great breakfast sandwich has it all – a flavorful protein, some melty cheese, an egg cooked exactly how you like it, something fresh and a really great type of bread. They are a complete meal that can be made ahead, are easy to take on the go and a good option for feeding a group and today, I am excited to give you my favorite breakfast sandwich recipes and some tips and tricks to making them turn out really good…

This month I started a breakfast sandwich series. It’s the beginning of October, the mornings are a little cooler now and I started waking up craving something warm and satisfying – enter the breakfast sandwich.
We usually do some sort of meal prep for weekday breakfasts, so I wanted all of these breakfast sandwiches to be able to be made ahead, taste good a few days down the road and to be re-heatable in either the oven or the microwave.

Let’s talk bread options…
There are two types of breakfast sandwich connoisseurs – those that believe the bread element is simply the outer layer and those that believe that the bread can make or break the entire sandwich. I am in the second group. If the bread isn’t delicious with great texture on both day one and day four then I don’t want to use it for my breakfast sandwich.

Your choices are a little bit different if you are planning on eating these breakfast sandwiches today. Because they won’t need to stay soft being stored in the refrigerator for several days, you can really use any bread that you love! Now that we have the bread covered, let’s move onto the eggs…

How do you like your eggs?
When it comes to eggs, you can make them any way you like! I have had success with the typical over medium, scrambled or omelette style, but I have also made breakfast sandwiches using over easy eggs, sunny side up or even poached eggs! Even with chilling, the yolks stay nice and silky and that is important to a yolk lover like myself.
If you are making these breakfast sandwiches for breakfast today, use the eggs right away, but if you are making them in a more meal prep situation then I suggest letting the eggs cool before assembling the sandwiches.
What kind of meat are we adding?
You have so many fabulous options when it comes to adding meat to your breakfast sandwich.
If you are not a meat lover, it’s ok, we can still be friends and you can create a delicious breakfast sandwich using a great bread, egg and cheese. No worries here!
My personal favorite choice is crispy pancetta. I am so obsessed with how salty pancetta is, but you can use bacon, ham, sausage patties, crumbled Italian sausage or even sausage links, beef patties (breakfast burger vibes are amazing) or even some shaved deli meat.

- For crispy bacon, pancetta or ham – my favorite way of doing this is by placing the pieces in a single layer over a parchment lined baking sheet and baking them in a 400 degree oven until they are crispy. Transfer them onto a paper towel lined plate to make sure the excess grease is removed before adding them onto the breakfast sandwiches
- For ground sausage, sausage or beef patties – simply cook until golden brown and cooked through. If you are making the sandwiches for breakfast today, use right away, but if you are using for meal prepping, I would allow the meat to cool a bit before assembling
- For deli meat – you can either simply add deli meat as is or you can crisp it up some on a skillet if you prefer

What else can you add to the breakfast sandwiches?
Of course we need to add some cheese. My personal suggestions are havarti, muenster, provolone and sharp cheddar. I love cheese, so I add some to the top and the bottom of each sandwich. This not only adds that wonderful cheese flavor, but it acts as a nice glue to help keep things together.
Adding baby arugula, pickled red onions, crispy onions or thin slices of apple (it’s actually a really great addition!) to your sandwiches can make them even more special!
