Apple Cinnamon Granola Muffins

Over the past few weeks, I have been on a huge granola muffin kick. The first one I made were these healthy pumpkin granola muffins then I made some fabulous chai spiced pear granola muffins (they will be added soon!) and now I have these apple cinnamon granola muffins. Each one of them are wonderful in their own unique ways, but I must say that my husband was absolutely obsessed with this apple cinnamon version.

Apples rock. They are a naturally sweet source of fiber, vitamins and antioxidants and they add something really special to anything they are added to… including these delicious granola muffins.

If you are looking for a quick and healthy treat to is perfect for breakfast, snacks or a light sweet treat then you have to give these apple cinnamon granola muffins a try.

Let’s get started…

This recipe really couldn’t be easier. While your oven is preheating to 350 degrees, combine your dry granola ingredients in a large bowl.

You will need 2 1/2 cups of old fashioned oats, 1/3 cup of coconut flakes, 1/3 cup of dried cranberries, 1/3 cup of chopped nuts, 2 tablespoons of chia seeds, 2 teaspoons of ground cinnamon, 1/2 teaspoon of nutmeg, a pinch or cloves, 1 teaspoon of baking powder and 1/2 teaspoon of salt.

In a separate bowl, whisk 1/2 cup of apple sauce into 1 1/2 cups of milk, 1/2 cup of maple syrup, 2 teaspoons of pure vanilla extract and 2 large eggs until the mixture is fully combined.

Combined the two bowls and add 1 1/2 cups of diced apples. I peeled mine, but this is not absolutely necessary. I have added them unpeeled and if you don’t hate an apple peels texture, feel free to skip the peeling step.

Generously grease a standard 12 cavity muffin tin and divide the batter evenly throughout all 12 cavities. You will notice that this mixture is liquidy, so be sure to divide both the granola and the liquid evenly into each cavity.

Bake the granola muffins for about 30 minutes in a 350 degree oven. They are ready when they feel springy to a light touch. This tells you that they are set. If you press in the center of a muffin and it feels loose or jiggly, let them bake a little longer.

Transfer the muffin tin onto a cooling rack and let your granola muffins rest until they are cool enough to remove. If they start to fall apart a little bit when you try to pull them out of the muffin tin, don’t worry! Just let them rest for another few minutes and they will come out in one piece.

If you want to sprinkle a tiny bit of course sugar over the muffins for a little crunch, go for it, but if you are using these muffins as a healthy breakfast or post-work out snack, skip the sugar…. they really don’t need it. They have such wonderful flavor as is.

These muffins remind me of little baked oatmeal cups and adding the apples and warm spices make them have a cozy apple pie vibe that you will absolutely adore. They are full of protein, fiber, healthy fats and antioxidants that make an excellent treat to grab for a quick breakfast, mid-afternoon snack or my husband and I grab one as a light, healthy dessert for those nights you can’t stop thinking about grabbing something a little sweet.

Ingredients

  • 2 1/2 cups of old fashioned oats
  • 1/3 cup of coconut flakes
  • 1/3 cup of dried cranberries
  • 1/3 cup of nuts, chopped
  • 2 tablespoons of chia seeds
  • 2 teaspoons of ground cinnamon
  • 1/2 teaspoon of nutmeg
  • a pinch or cloves (optional)
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1/2 cup of apple sauce
  • 1 1/2 cups of your favorite milk
  • 1/2 cup of real maple syrup
  • 2 teaspoons of pure vanilla extract
  • 2 large eggs
  • 1 1/2 cups of apples, peeled and diced
  • course sugar (optional)

Instructions

  • Preheat your oven to 350 degrees
  • Generously grease a 12 cavity muffin tin and set aside for now
  • In a large bowl, mix 2 1/2 cups of old fashioned oats, 1/3 cup of coconut flakes, 1/3 cup of dried cranberries, 1/3 cup of chopped nuts, 2 tablespoons of chia seeds, 2 teaspoons of ground cinnamon, 1/2 teaspoon of nutmeg, a pinch of cloves (optional), 1 teaspoon of baking powder and 1/2 teaspoon of salt until everything is evenly distributed
  • In a separate bowl, whisk 1/2 cup of apple sauce into 1 1/2 cups of milk, 1/2 cup of maple syrup, 2 teaspoons of pure vanilla extract and 2 large eggs until completely combined
  • Add the apple sauce mixture into the granola and mix until fully combined
  • Fold 1 1/2 cups of peeled and diced apples into the mixture
  • Divide the mixture between the 12 greased muffin tins being sure to divide the liquid in the batter evenly throughout each portion
  • Bake the muffins in a 350 degree oven for about 30 minutes or until the centers feel set to a light touch
  • Transfer the muffin tin onto a cooling rack or cutting board and let the muffins cool until they can be removed (if they start to fall apart when you try to remove them, let them cool for another 5 minutes or so)
  • Store fully cooled leftovers in an airtight container at room temperature for 3 days or in the refrigerator for 5 days
