Roasted Berries

Roasting is one of the best ways to get the most flavor out of so many things – vegetables, meat and now… berries.

And if you are thinking to yourself that it seems like too much work, let me assure you that it is super easy! We are adding berries. a little sugar and some citrus juice into a baking dish and letting the oven do its job. About 30 minutes later, you’ll have tender, sweet berries bursting with flavor that can be used over yogurt, a cake, with granola, cottage cheese… or just with a spoon.

Let’s get started…

In a deep baking dish, combine about 4 cups of berries with 2 tablespoons of granulated sugar and 2 tablespoons of fresh citrus juice. You can use a combination of berries (today, I am using a cup each of strawberries, blackberries, blueberries and raspberries) and any citrus you have on hand. I love using orange juice here, but you can use lemons, limes or even grapefruit!

Roast the berries uncovered in a 400 degree oven for 25-30 mixing about half way through. The berries should be thick, glossy and well broken down.

Thats it… they are ready to go! Easy, right? Really, they couldn’t be easier and they are so incredibly delicious!

If you prefer a smoother consistency, you can use a potato masher to break the berries down more and you can even blend some in a food processor if you want things real smooth.

Once I started roasting berries, I do it all the time now. There is something really special about what a hot oven brings out of them! And if you want to add a splash of vanilla extract, bourbon or some orange zest to add even more layers of flavor, do it! You’ll be glad you did…

Roasting berries with a little sugar and citrus brings out the very best in them! They are perfect over yogurt, granola or even a slice of cake!

Ingredients

  • 4 cups of berries (fresh or frozen)
  • 2 tablespoons of granulated sugar
  • 2 tablespoons of fresh citrus juice

Instructions

  • Preheat your oven to 400°
  • Combine 4 cups of berries, 2 tablespoons of granulated sugar and 2 tablespoons of citrus juice in a deep baking dish 
  • Roast the berries in a 400° over for 25-30 minutes (mixing about half way through)
  • Transfer the baking dish onto a heat proof surface and allow the berries to cool
  • Mash or blend if a smoother consistency is preferred
