Spiced Applesauce Cake

I am a huge fan of apple desserts. From apple pie to my apple chia pudding and even just a great crisp apple sliced with a dollop of peanut butter on the side… apples are such a wonderful sweet treat and this spiced apple sauce cake is one of the easiest ways to make yourself (or a friend) a wonderful apple treat with just a few minutes of actual effort.

Let’s get started…

In a large bowl, combine 1/2 cup of olive oil, 2 large eggs, 1 cup of natural unsweetened apple sauce, 1/3 cup of greek yogurt (you can use plain or vanilla) and 2 teaspoons of pure vanilla extract until smooth.

Add 1/2 cup of brown sugar and 1/2 cup of granulated sugar and vigorously whisk until completely combined.

Mix 1 3/4 cups of all purpose flour, 1/2 teaspoon of baking soda, 1/2 teaspoon of baking powder, 1 1/2 teaspoons of ground cinnamon, 1/2 teaspoon of nutmeg, 1/2 teaspoon of ground ginger, 1/4 teaspoon of cloves and 1/4 teaspoon of sea salt until the batter is just combined. A few lumps in this batter is completely fine, just make sure you don’t see any dry ingredients left unincorporated.

Transfer the batter into a greased and parchment lined loaf pan (you can use an 8″x4″ or a 9″x5″) and bake in a 350 degree oven for 50-55 minutes or until a toothpick will come out of the middle of the loaf clean.

Let the cake cool completely in the loaf pan before transferring it out onto a cooling rack.

This spiced applesauce cake is so tender and moist, warm and comforting. Its perfectly sweet with those wonderfully nostalgic applesauce flavors in every bite.

Ingredients

  • 1/2 cup of olive oil
  • 2 large eggs
  • 1 cup of natural unsweetened apple sauce
  • 1/3 cup of greek yogurt (plain or vanilla)

  • 1/2 cup of brown sugar
  • 1/2 cup of granulated sugar
  • 1 3/4 cups of all purpose flour
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of baking powder

Instructions

  • Preheat your oven to 350°
  • Grease and line a 8”x4” loaf pan with parchment paper 
  • In a large bowl, whisk 1/2 cup of olive oil with 2 large eggs, 1 cup of natural unsweetened apple sauce, 1/3 cup of greek yogurt and 2 teaspoons of pure vanilla extract until well combined 
  • Add 1/2 cup of brown sugar and 1/2 cup of granulated sugar and whisk until smooth 
  • Add 1 3/4 cups of all purpose flour, 1/2 teaspoon of baking soda, 1/2 teaspoon of baking powder, 1 1/2 teaspoons of ground cinnamon, 1/2 teaspoon of nutmeg, 1/2 teaspoon of ground ginger, 1/4 teaspoon of cloves and 1/4 teaspoon of sea salt and mix until just combined 
  • Pour the batter into your prepared loaf pan and bake in a 350° oven for 50-55 minutes or until a toothpick comes out of the center clean
  • Allow the cake to cool completely before slicing
  • Store leftovers in an airtight container for up to 4 days
