Almond Flour Pumpkins

As soon as the fall arrives, I begin incorporating pumpkins into every aspect of life. While pumpkin flavored drinks and desserts are obvious, I also love adding cute pumpkin visuals to sweet treats especially when they are going to be brought to a party or get together…

A delicious treat + cute pumpkin visuals = holiday perfection

Now I do have a slight problem with this whole situation, because I am not a very artistic person (food photography and creating 3D art visuals are very different skills!), but thankfully, I found inspiration for these adorable almond flour pumpkins and all of my holiday treats are better for it.

Let’s get started…

Full disclosure, I found the inspiration for these cuties on a few different blogs, so I do not deserve full credit for them, but I have made them my own and can’t wait for you to try them!

Combine a cup of superfine almond flour with 1/2 cup of natural smooth peanut butter, 2-3 tablespoons of pure maple syrup and 1/2 teaspoon of pumpkin spice in a small bowl until you get a texture than will hold together when squeezed.

This recipe is flexible, so if the mixture won’t hold it’s shape when you squeeze it, drizzle a little more maple syrup in and remix… if its a little too loose, dust in a little more almond flour. Feel free to play with the consistency until it feels right.

Once the mixture is ready, form smooth round little balls and use a long toothpick or baking twine to create your pumpkin ribs. You can make all of your pumpkins uniform or make each one unique!

I like to dust some in sugar and add a chocolate chip for the stem. Aren’t they adorable?

You can also play with the color on your pumpkins by adding some food coloring to the almond flour mixture.

Add them to cakes, cupcakes or a dessert board with some oregano leaves and crushed chocolate cookies for the dirt and stems.

These little pumpkins are so cute and just perfect for so many fall baking plans!

Happy harvest baking my friends!
