Pink Poppyseed Vinaigrette

I love colorful food and if you have the option to make your salad dressing pink, why wouldn’t you? Especially if that dressing is not only beautiful, but really delicious too. This beautiful poppyseed vinaigrette gets its bright pink color from fresh red onions and fabulous flavors from honey dijon, white wine vinegar and a little pink sea salt… just to keep that pink theme going.

You will love this tangy, sweet and subtly bitter twist on a classic poppyseed dressing, especially if you are a fan of the earthy pop of flavor that red onions add. Whether you are a fan of unique dressings or have a pink themed dinner party coming up, this beautiful dressing is something you should try.

Let’s get started…

Begin by gathering 1/2 cup of extra virgin olive oil, 1/3 cup white wine vinegar, 1/3 cup of chopped red onion, 1/4 cup of granulated sugar, 2 teaspoons of honey dijon mustard, 1/2 teaspoon of Himalayan pink sea salt (or kosher salt) and 1 tablespoon of poppy seeds (I love Spice Islands Poppyseeds!).

You will need a blender or food processor to fully incorporate the onions into this dressing. You don’t need anything real powerful, just a regular blender will do the trick. And if you have never done so before, I love making dressings in a blender! They come together super fast and the blender helps thicken the mixture and create a creaminess that would require quite a whisking arm… and who wants to work that hard for a salad dressing?

Combine 1/2 cup of extra virgin olive oil, 1/3 cup white wine vinegar, 1/3 cup of chopped red onion, 1/4 cup of granulated sugar, 2 teaspoons of honey dijon mustard and 1/2 teaspoon of pink sea salt (or kosher salt) and blend until the red onion is completely blended down into tiny pieces.

The vinaigrette should be pink and bubbly at this point.

Last, but not least, add 1 tablespoon of poppyseeds and whisk to evenly distribute them.

Look at that beautiful pink color! I just love that only 1/3 cup of red onions can create such a beautiful vibrantly colored vinaigrette. The sweetness and the tanginess in this dressing covers any bitterness that is usually associated with the addition of red onion, so for those of you that are not big fans of raw red onion, I would suggest giving this one a try anyways.

This pink poppyseed dressing is bright, sweet and tangy… and absolutely beautiful. It pairs perfectly with any spring or summer salad and I highly suggest a salad containing some fresh fruit. There is something about the combination of fresh fruit, crisp greens and a sweet poppyseed dressing that I really love and I am quite confident that you will love it too…

Ingredients

  • 1/2 cup of extra virgin olive oil
  • 1/3 cup of white wine vinegar
  • 1/3 cup of red onion, finely chopped
  • 1/4 cup of granulated sugar
  • 2 teaspoons of honey dijon mustard
  • 1/2 teaspoon of pink sea salt (or kosher salt)
  • 1 tablespoon of poppyseeds

Instructions

  • Combine 1/2 cup of extra virgin olive oil, 1/3 cup white wine vinegar, 1/3 cup of chopped red onion, 1/4 cup of granulated sugar, 2 teaspoons of honey dijon mustard and 1/2 teaspoon of pink sea salt (or kosher salt) in a blender or food processor and blend until the red onion is in tiny pieces and the vinaigrette is thick and bubbly
  • Transfer the vinaigrette into a bowl and whisk in 1 tablespoon of poppyseeds
  • Serve immediately or chill in an airtight container
