Summer Peach Salad

We are right in the heart of peach season and I am loving it so much. Yesterday, I drove past a few farmers stands selling big, beautiful peaches and I couldn’t help getting excited about heading home and whipping up a big summer salad celebrating these sweet, juicy summertime classics.

To get this salad started, gather about 4 ounces of your favorite greens. I love using mixed greens for this salad. Having a bit of kale, spinach, arugula and leafy greens all help to balance out the natural sweetness of the peaches.

In addition to the greens, you will need a medium shallot or some red onion, a small sweet bell pepper, 1/4 cup of roughly chopped walnuts, 1 ounce of crumbled goat cheese, some extra virgin olive oil, balsamic vinegar, salt and black pepper and, of course, a big, ripe peach.

Now that you have all of your ingredients gathered up, chop them, slice them, dice them, cut them into your favorite shapes and add everything into a large bowl.

Drizzle the salad with some extra virgin olive oil and balsamic vinegar and add a pinch of salt and black pepper. Toss until everything is combined.

Divide the salad into two large bowls or four smaller bowls, depending on if the salads are being served as the main course or as appetizers and enjoy!

This salad is just wonderful. The peaches are soft, juicy and sweet and they pair so well with the earthy greens, the sharpness of the shallot, the crisp bell peppers and crunchy walnuts. Each ingredient adds something special to every bite.

This salad pairs great with grilled chicken, a nice steak or a piece of fish, but it is simply fabulous just on its own. Toss a few crisp croutons over the bowl and enjoy celebrating peach season in a really delicious and healthy way.

Ingredients

  • 1 large ripe peach, thinly sliced
  • 4 ounces of mixed greens
  • 1 medium shallot or red onion, thinly sliced
  • 1 small sweet bell pepper, thinly sliced
  • 1/4 cup of walnuts, roughly chopped
  • 1 ounce of goat cheese, crumbled
  • extra virgin olive oil
  • balsamic vinegar
  • salt and black pepper

Instructions

  • Combine salad ingredients in a large bowl 
  • Dress with 2 tablespoons of extra virgin olive oil, 2 tablespoons of balsamic vinegar and a pinch of salt and black pepper 
  • Toss to combine and add more dressing, if desired
  • Enjoy!
