Have you ever researched chili recipes? If you do, get ready for many, MANY variations. Everyone has their own variation of chili and there are really endless combinations of protein, vegetables, beans, broths add ins and spice mixtures that some swear by.
One of the few common threads running through some of the most popular chili recipes is the suggestion to make your own chili seasoning mixture and I would like to toss my own “here here” into that pile of suggestions.
It is easy to underestimate the power of customizing your own spice mixtures, but many times what people like or don’t like about certain dishes can come down to the addition of one spice that they don’t particularly like.
When you combine your own spice mixture, you can add more of what you love and less or even none of what you don’t.
This is my recipe for a well balanced chili spice seasoning. Let’s get it started…
My chili seasoning includes 2 tablespoons of chili powder (a good way to start a chili mix!), 1 tablespoon of dried onion flakes, 1 tablespoon of dried parsley flakes, 1 tablespoon of dried garlic flakes, 2 teaspoons of cumin, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of red pepper flakes (this amount will create a hint of heat, add more if you’d like more of a punch), 1 teaspoon of steak seasoned salt (I use Lawry’s seasoned salt), 1 teaspoon of mexican oregano (mexican oregano pairs better with cumin and chili powder than italian or greek oregano does), 1 teaspoon of cocoa powder (cocoa powder adds a fabulous depth of flavor, but will not taste at all like chocolate), 1/2 teaspoon of black pepper and 2 teaspoons of cornstarch (this will prevent the spices from clumping).
Combine everything together and use it generously in your next batch of chili or as a dry rub for steaks, roasts or ribs.
