Sweet potatoes are so wonderful. In addition to being a source of fiber, vitamins and minerals, they are naturally sweet and add beautiful flavor to so many dishes.
These roasted sweet potatoes make a wonderful addition to salads and vegetable bowls, they pair well with baked chicken, fish or pot roast and they make a fabulous afternoon snack.
They can be cut into wedges or cubes and seasoned with any blend of your favorite spices.
Let’s get started…
Begin by peeling and cutting your sweet potatoes into your desired shape. I prefer using several smaller sweet potatoes, as they are easier to work with, but any sweet potato will work.
Once they are peeled and cut, place them into a large bowl and add about 2 tablespoons of olive oil and 1-2 teaspoons of your favorite seasoning. I use 1/2 teaspoon of garlic powder, 1/2 teaspoon of seasoned salt (like Lawry’s), 1/4 teaspoon of ground cinnamon and a big pinch of salt and black pepper, but you can use whatever you like!
Toss the sweet potatoes until they are all coated generously and then transfer them onto a parchment lined baking sheet and spread them out into a single layer.
Roast the sweet potatoes in a 400 degree oven until they are tender and begin to lightly brown on the edges. I usually cut my sweet potatoes into thin wedges and they typically take about 15-18 minutes to become tender, but if you cut your sweet potatoes into larger shapes, they will take longer.
As they are roasting, give them a toss to ensure that they roast evenly and when they are tender, pull them out and enjoy! Easy and delicious…
Simple Roasted Sweet Potatoes
Ingredients
- 2-3 small sweet potatoes, peeled, sliced
- 2 tablespoons of olive oil
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of seasoned salt
- 1/4 teaspoon of ground cinnamon
- a pinch of salt and black pepper

- Preheat your oven to 400 degrees
- Peel and cut your sweet potatoes into desired shapes and transfer them into a large bowl

- Transfer the seasoned sweet potatoes onto a parchment lined baking sheet and spread into a single layer
- Roast the sweet potatoes in a 400 degree oven, tossing occasionally, until they are tender and lightly browned
