Our patties are made with ground lamb seasoned with garlic, red onions and fresh herbs and they are served in mini pitas topped with tzatziki sauce, tomatoes, red onions and feta. These sliders are small, but the flavors are big and if you love those inviting mediterranean flavors then you are going to love these greek lamb pita sliders.
Let’s get started…
Begin by combining 16 ounces of ground lamb with 1/4 cup of finely grated red onion, 2 cloves of finely grated garlic, 2 tablespoons of finely chopped parsley, 1 tablespoon of freshly squeezed lemon juice, 1/2 teaspoon of salt, 1/2 teaspoon of ground coriander and 1/4 teaspoon of black pepper in a large bowl.
Divide the mixture into 8 evenly sized portions and form into small patties.
The sliders should be about an inch thick and 3 inches wide. Try not to compact them too much as you shape them. Transfer the patties onto a plate and place a large skillet or grill pan over medium to medium high heat.
Once the skillet is nicely warm, add a few tablespoons of olive oil and add the patties. Let them cook for at least 2-3 minutes on the first side without shifting them. This will give them time to form a nice golden brown crust before you flip them.
Once the underside has formed a golden brown crust, flip the patties over and allow them to cook to your desired level of doneness. When the middle of the sliders are at 135 degrees they will be right around medium and this is the suggested ideal serving temperature for lamb burgers. You can definitely cooked them longer, but keep in mind that the closer to well done that they cook, the drier they can become.
When your sliders are golden brown on both sides and you are happy with the internal temperature, transfer them onto a plate and gather your assembly ingredients.
To assemble your sliders, you will need 8 mini pitas, some tzatziki sauce, a small thinly sliced tomato, some thinly sliced red onion, baby arugula and some crumbled feta cheese. If you are not a fan of one of these toppings, feel free to leave them out!
I like to start with a dollop of tzatziki on the base of my mini pita. This can help to keep everything together. Next, I add a slice of tomato and then my lamb patties…
Top the lamb with a little arugula and some red onion and then give the sliders another drizzle of tzatziki and finish everything off with crumbled feta…
That creaminess of the tzatziki and feta really finish these sliders off in the perfect way. Tzatziki is one of my all time favorite sauces and the tangy, salty flavor of feta helps to even out the rich lamb burgers and really compliments each layer of these sliders.
These thick little sliders are so full of flavor. Look at how moist this ground lamb is and the tart lemon, fresh herbs and garlic create the most beautiful flavors.

Ingredients
Lamb Sliders
- 16 ounces of ground lamb
- 1/4 cup of red onion, finely grated
- 2 cloves of garlic, finely grated
- 2 tablespoons of fresh parsley, finely chopped
- 1 tablespoon of freshly squeezed lemon juice
- 1/2 teaspoon of salt
- 1/2 teaspoon of ground coriander
- 1/4 teaspoon of black pepper
- 2 tablespoons of olive oil
Assembly
- 8 mini pitas
- tzatziki sauce
- red onions, thinly sliced
- tomato, thinly sliced
- baby arugula
- feta cheese, crumbled
Instructions
- Combine 16 ounces of ground lamb with 1/4 cup of finely grated red onion, 2 cloves of finely grated garlic, 2 tablespoons of finely chopped parsley, 1 tablespoon of freshly squeezed lemon juice, 1/2 teaspoon of salt, 1/2 teaspoon of ground coriander and 1/4 teaspoon of black pepper in a bowl until the ingredients are evenly distributed
- Divide the mixture into 8 portions and form into evenly thick disks
- Place a large skillet over medium to medium high heat and add 2 tablespoons of olive oil
- Once the skillet is very warm, add the burgers and cook for 2-3 minutes on the first side
- Once a crisp crust has formed under on the underside, flip the burgers and cook to your desired level of doneness (135 degrees for medium)
- Open 8 mini pitas and spoon a small amount of tzatziki onto the bottom portion of each pita
- Add the lamb burgers and top with red onion, tomatoes, baby arugula and crumbled feta
- Drizzle with additional tzatziki and enjoy!
