Caesar Chicken & Bacon Wraps

This is one of my all time favorite quick and easy lunches. A soft tortilla filled with crispy bacon, shredded chicken tossed in creamy caesar, some parmesan and baby arugula… so flavorful and so delicious…

Let’s get this wrap started…

I usually make this wrap when I have some leftover chicken in my refrigerator, but if you are starting from scratch, simply cook a boneless skinless chicken breast seasoned with some salt, black pepper and garlic powder and then shred it up. Rotisserie chicken is great for wraps like this too.

In a mixing bowl, combine 4 cups of shredded chicken with 1 cup of shredded parmesan and 1/2 cup of creamy caesar dressing. If you want to make your own creamy caesar, check out my creamy caesar dressing recipe. It is tangy, salty and full of parmigiano reggiano… you are going to love it.

Chop 6 slices of crispy bacon into 1/2′ inch pieces and gather 4 large flour tortillas (may I suggest my green spinach and herb tortillas?) and 2 cups of arugula or your favorite leafy green.

On a large tortilla, layer 1 cup of the shredded chicken, caesar and parmesan mixture, some crispy bacon and arugula. Roll it up tight and slice it in half.

Done.

So easy, right? And this wrap is so delicious! I have always been a huge fan of caesar dressing, especially a creamy caesar dressing and this wrap celebrates its tangy, salty goodness in a big way. You’ve got protein, some greens and enough parmesan to make anyone happy. This is one of my favorite lunches for a reason and I am quite confident that you are going to love it too.

Ingredients

  • 4 large flour tortillas
  • 4 cups of shredded chicken
  • 2 cups of arugula
  • 6 slices of bacon, crisp, crumbled
  • 1 cup of parmesan, finely shredded
  • 1/2 cup of creamy caesar dressing

Instructions

  • In a large bowl, combine 4 cups of shredded chicken with 1 cup of shredded parmesan and 1/2 cup of creamy caesar dressing
  • Cook 6 slices of bacon until crisp and then chop into 1/2” pieces
  • Assemble each wrap by adding 1 cup of the shredded chicken mixture, some of the crumbled bacon and arugula into the middle of the wrap
  • Roll tightly and slice in half
  • Enjoy immediately or wrap in foil and chill for later
