There are certain recipes that everyone should have on hand and a simple chocolate loaf should definitely be one of them.
This chocolate olive oil loaf comes together in one bowl and it is moist, flavorful and perfect for so many purposes.
A slice of this chocolate loaf cake is the perfect afternoon snack, simple dessert or base for a fabulous hot fudge sundae. You can also slice this loaf horizontally and make a small layered birthday cake or use it to create my favorite ice cream cake.

Begin by vigorously whisking 2 large eggs with 1/2 cup of olive oil and 2 teaspoons of vanilla extract until the oil and eggs are fully combined. Add 3/4 cup of granulated sugar and 3/4 cup of brown sugar and continue to whisk vigorously until you have a pale and bubbly mixture.
Sift 1 1/4 cups of all purpose flour, 3/4 cup of natural unsweetened cocoa powder, 2 teaspoons of espresso powder, 1 1/2 teaspoons of baking powder, 1/2 teaspoon of baking soda and 1/2 teaspoon of salt into the bowl and mix until mostly combined.
Pour a cup of hot strongly brewed coffee into the batter and gently mix until evenly distributed and then transfer the batter into a greased and parchment lined loaf pan.
Bake in a 350 degree oven for about an hour or until the center of the loaf feels set and a toothpick will come out of the center of the loaf with maybe just a tiny crumb or two hanging on.
Transfer the loaf onto a cooling rack and let it rest in the loaf pan for 10-15 minutes before transferring it out onto the cooling rack to continue cooling.
Because you lined the loaf pan with parchment paper, don’t feel rushed to get the loaf out of the pan. Transferring it out of the pan will just help it cool faster and this is only important if you are waiting for the cake to cool for a layer cake or if you plan to add frosting.
This chocolate olive oil loaf has wonderful texture! It is moist and tender with loads of chocolate flavor! Adding the hot coffee into the batter helps create both a fabulous texture and a bold chocolate profile.
This cake is amazing as is, but topping it with a simple whipped cream or chocolate buttercream pairs beautifully with it too!

- 2 teaspoons of pure vanilla extract
- 3/4 cup of brown sugar

Instructions
- Preheat your oven to 350°
- Grease a loaf pan, line with parchment paper and set aside for now
