
I am here again with another installment in my breakfast sandwich series with these bacon, egg and cheese flatbread breakfast foldovers.
Soft flatbread filled with melted cheese, a fried egg and crispy bacon. These foldovers are simply delicious and since they come together quickly, they are great breakfast for busy mornings or to use as a meal prep breakfast for the work week.

If you are looking for a great, simple breakfast… this is it!
You can start by making your own soft flatbread using my favorite flatbread recipe here – or pick some up at your local bakery or grocery store. As long as it is soft and flexible, it will work for these foldovers.

For the bacon, my favorite way to create beautifully crisp bacon is to lay them out on a baking sheet and bake in a 400 degree oven for 12-14 minutes or until crisp. Transfer the crisp bacon onto a paper towel lined plate until your foldovers are ready to assemble.
For the eggs, place a large skillet over medium heat, oil the skillet and cook the eggs to your preference. I love sunny side up eggs with a little sprinkled cheese over the top, but over easy, over hard or even scrambled like in my bacon, egg and cheese on brown bread sandwiches.

To assemble, I like to start by adding a slice or two of cheese onto one half of your flatbreads and set them in the oven to melt the cheese a little. Even if you turned the oven off when you pulled the bacon out, there should still be enough residual heat in there to melt the cheese.
Add a strip of two of crispy bacon and then your eggs and fold the flatbread over top.

Flatbread Breakfast Foldovers
Ingredients
- flatbread (1 per foldover)
- your favorite cheese, sliced or shredded
- bacon (2 slices per foldover)
- large eggs (1 per foldover)
Instructions
- If you want to make your own flatbread, follow my recipe here or find a good soft flatbread at your local bakery or grocery store
- Preheat your oven to 400 degrees
- Place your bacon onto a baking sheet and bake in a 400 degree oven for 12-14 minutes or until it is crisp then transfer the bacon onto a paper towel lined plate until you are ready to assemble the sandwiches
- Place a large skillet over medium heat, lightly oil the skillet and cook your eggs to your liking
- Assemble the foldovers by adding some cheese one half of the flatbread, adding 2 strips of crisp bacon and then your egg
- Fold the flatbread in half and enjoy warm or let the foldover cool and wrap it in parchment paper, store it in an airtight container in the refrigerator until you are ready to enjoy
- Reheat in the parchment paper in the microwave or oven until warmed through
