Summertime is all about salads and this beauty combines tart citrus with sweet berries, creamy goat cheese and salty pistachios to create one balanced, refreshing and inviting salad.
Let’s get started…
Begin by peeling and slicing up a grapefruit. The pink and red ones are a little more sweet with less tartness and the white ones are more tart with just a hint of sweetness, so choose the grapefruit you prefer.
You will also need a few large strawberries, a small cucumber, some crumbled goat cheese, chopped pistachios and some greens. Today, I am using baby arugula and few leaves of this beautiful purple artisan lettuce I picked up, but leafy greens, a spring mix or endive will work great with this salad too.
Add a layer of greens into the base of your salad bowl or a large plate. Layer thin slices of grapefruit, strawberries and cucumbers over the greens.
Sprinkle some crumbled goat cheese and chopped pistachios over the entire plate along with a pinch of sea salt and freshly cracked black pepper.
When it comes to dressing this salad, there are already loads of fabulous flavors going on, so you want to choose something that will compliment the ingredients and not over power them. A simple drizzle of a good quality extra virgin olive oil and balsamic vinegar is perfect for this salad.
The balsamic vinegar adds a lovely layer of acid that nicely balances the sweetness and saltiness of the other ingredients. If you are not a fan of balsamic vinegar, you can use a mild vinaigrette or Italian dressing on this salad too.

Grapefruit, Strawberry & Pistachio Salad
Ingredients
- grapefruit, peeled and sliced
- strawberries, sliced
- cucumber, sliced
- greens, chopped
- arugula
- goat cheese, crumbled
- pistachios, chopped
- sea salt and black pepper
- extra virgin olive oil and balsamic vinegar
Instructions
- Begin with a layer of greens and arugula in a salad bowl or on a large plate
- Layer sliced grapefruit, strawberries and cucumbers over the greens
- Top with crumbled goat cheese and chopped pistachios
- Top with sea salt, freshly cracked black pepper, extra virgin olive oil and balsamic vinegar
