Lamb is a beautifully tender protein packed with iron, zinc, vitamin B12 and selenium. It is flavorful and pairs great with mediterranean spices.
Easter is right around the corner and these grilled lamb chops seasoned with a simple blend of cumin, coriander, garlic and sumac are a wonderful option for Sundays dinner. You can grill them indoors or out and serve them alongside some lemon risotto and my sumac dill yogurt sauce. This beautiful delicious meal will be ready in about 30 minutes.
Let’s get started…
Begin by adding a clove of finely minced garlic, a tablespoon of finely chopped fresh dill, a teaspoon of sumac and a pinch of sea salt into a heaping cup of plain greek yogurt. Mix well and then let it chill in the refrigerator until the lamb is ready to go.
As with all red meat, let your lamb chops come to room temperature before grilling them. This will help them remain tender when they are placed over a hot grill. Definitely time well spent!
Season both sides of your chops with sumac, cumin, coriander and garlic salt. This simple combination of spices will help bring out the best in your lamb chops.
Pre-heat your grill or grill pan and generously brush the surface with a neutral oil. Place the seasoned lamb chops onto the grill and let them cook undisturbed for 3 minutes. Do not move the chops during this part. They will release from the grill once they form a nice crust on the underside.
Flip the lamb chops and grill the other side for 3 minutes.
At this point, you should have nice crusty grill marks on both sides and the interior of your chops should be right around medium rare with an internal temperature of 135 degrees. This is the best temp to serve lamb at, but if you prefer your lamb cooked more, flip the lamb chops again and cook to your desired level of doneness.
These lamb chops are fabulous. It is crazy the magic that a grill and a few simple spices can create. The meat is tender with a beautiful crust on the outside and wonderful flavors throughout.
The chops are great on their own, but once you dip them into that sumac dill yogurt sauce, you will be head over heels in love. The garlic, the fresh dill and that tart, citrusy sumac come together in a very special way.

Grilled Lamb Chops with a Sumac Dill Yogurt Sauce
Ingredients
- lamb chops
- 1/2 teaspoon of sumac
- 1/2 teaspoon of cumin
- 1/2 teaspoon of ground coriander
- 1/2 teaspoon of garlic salt
Sumac Dill Yogurt Sauce
- 1 cup of plain greek yogurt
- 1 clove of garlic, finely minced
- 1 tablespoon of fresh dill, finely chopped
- 1 teaspoon of sumac
- a pinch of sea salt
Instructions
- Combine 1 cup of plain greek yogurt, 1 clove of finely minced garlic, 1 tablespoon of finely chopped fresh dill, 1 teaspoon of sumac and a pinch of sea salt in a dish. Cover and chill until the lamb is ready to serve
- Combine 1/2 teaspoon of sumac, 1/2 teaspoon of cumin, 1/2 teaspoon of dried coriander and 1/2 teaspoon of garlic salt in a small dish and generously season the lamb chops
- Let the seasoned lamb sit at room temperature for 30 minutes before grilling
- Place a grill pan over medium heat and allow it to warm for several minutes
- Drizzle the grill with olive oil and set the seasoned lamb chops onto the warm grill
- Let the chops cook undisturbed for 3 minutes and then flip and cook undisturbed for 3 minutes on the other side
- The chops should be cooked to about medium rare at this point. If you prefer them cooked more, flip them in a way that will create cross section sear marks on the grill and cook to your preferred level of doneness
- Serve with the chilled sumac dill yogurt sauce
