These chicken and sweet potato skewers are glazed with a honey ginger sauce that will have you licking your fingers (and the plate). They come together in less than 30 minutes with no marinating ahead of time required. A sweet, sticky, flavorful dinner that everyone will love.
Let’s get started…
Begin by peeling and cutting 2 medium sweet potatoes into 1 inch cubes. Cut 2 boneless skinless chicken breasts or 3 thighs and a small sweet onion into the same sized pieces.
Bring a large pot of water to a boil and boil the sweet potatoes for 5 minutes to give them a little head start.
Drain the sweet potatoes and grab your skewers!
If you are using wooden skewers and plan to grill them, soak the skewers in water for about 30 minutes before using them to prevent them from burning.
Once the sweet potatoes are cool enough to touch, assemble your skewers by alternating pieces of chicken, sweet potato and onion.
Once your skewers have been assembled, season them generously on all sides with a combination of 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1/2 teaspoon of chili powder, 1/2 teaspoon of cumin and an optional, but highly recommended, 1/4 teaspoon of ground cinnamon.
Place a large flat skillet or grill pan over medium to medium high heat and lay the skewers down leaving a little bit of space between them.
While the skewers are cooking on the first side, whisk 1/3 cup of honey with about a tablespoon of ginger paste, 2 cloves of finely minced garlic, 1/4 cup of soy sauce, 2 tablespoons of hoisin or ketchup and 1 tablespoon of lime juice or rice vinegar in a small dish.
As soon as the underside gets a little crispy and lightly charred, flip the skewers and brush the first browned side with your honey ginger glaze.
Continue flipping the skewers and brushing them with the glaze until the chicken is cooked through and the sweet potatoes are tender.
This the color and caramelization that we are looking for on these skewers. If your skillet is getting to hot and burning the glaze, reduce the temperature a little, but don’t be afraid to let things get deeply browned and a little charred in places. All of that color equals flavor… and flavor is good…
These skewers are so full of flavor and once you take a bite of one of those super crispy edges, you’ll be officially on team charred.
Whether you are pan searing your skewers for a quick weeknight dinner or grilling them at a summertime barbecue, they are sure to be a crowd favorite.
Serve with rice and a dinner salad.
