Huevos rancheros is one of those dishes that works any time of day and for any occasion. Its a great way to start the day and an even better way to wrap it up. It is completely customizable, so if you don’t love black beans, use red ones and if you don’t like beans at all, leave them out entirely. You can use ground turkey or even chicken in place of beef, if you are avoiding red meat and you can leave the meat out entire to make this dish vegetarian.
None of the elements are complicated, but be ready to have a few different things going on at once. The good thing is that none of them require your undivided attention, so there is no need to be nervous! Just grab three skillets and clear your counter top and be ready to make something that you will undoubtedly want to make again and again in the future.
Lets get started…
Start with the pico de gallo. Finely chop 1 large vine ripened tomato, half of a small red onion and a small finely diced jalapeño. Transfer into a large bowl and add 1/4 cup of finely chopped fresh cilantro, a pinch of salt and black pepper. Squeeze the juice of lime into the bowl and mix well.
Take a quick taste test and add additional salt or black pepper, if necessary and then set aside.
Make the spicy ground beef by adding 1/2 lbs of ground beef into a skillet over medium heat. Add a crushed of grated clove of garlic, a tablespoon of tomato paste and some of your favorite taco or steak seasoning. I love Lawry’s steak seasoning in this ground beef, but feel free to use your favorite seasoning blend.
Once the meat has browned and is cooked through. Remove the skillet from the heat and set aside for now.
Now for the refried black beans. This is my all time way to whip up a batch of quick, super delicious refried black beans.
Add a 15oz can of black beans into a large skillet over medium heat. Add a crushed or finely grated clove of garlic and a big pinch of cumin, onion powder and chipotle seasoning, if you have it on hand. This is my favorite way of seasoning these beans, but feel free to customize the flavors how you like. Bring the beans up to a simmer and add a tablespoon of butter. As soon as the beans begin to soften, mash most of them and reduce the heat to low. Let the beans reduce over low heat while you prepare the remaining ingredients.
Add 6oz or about 3/4 of a cup of corn into a small dry skillet and place it over medium high heat. You will hear the corn sizzle and pop a little. Stir the corn around so that all of the corn blisters and when you are happy with the amount of color, transfer the corn into a small bowl and set it aside.
Last, but definitely not least, fry up your eggs. I love my eggs sunny side up, but any style eggs will work. I do recommend eggs with a runny yolk though. There is nothing quite as luxurious as all of these beautiful ingredients topped with a runny yolk.
You will have a few different pans going at once, but none of them require your full attention, so don’t get overwhelmed! Once your eggs are done, it is time to assemble your huevos rancheros!
In addition to the pico de gallo, the blistered corn, refried black beans and spicy ground beef, you will need some crumbled queso fresco, tortillas or tostadas, some sour cream and finely chopped cilantro.
Start by turning off all of your burners (this may sound obvious, but you’d be surprised at how easy it is to leave one on when you had so many going all at once!) and grab your favorite plates. You can assemble everything with a big soup spoon, so grab one of those too…
Start by smearing some of those beautiful black beans over a tortilla or tostada. I love the crunch of tostadas, but there is also something fabulous about a soft corn tortilla here too. Next, add some of the ground beef, corn and your eggs. Top with pico de gallo, a big dollop of sour cream, some cilantro and maybe a few lime wedges.

Ingredients
Pico de Gallo
- 1 large vine ripened tomato, diced
- 1/2 small red onion, finely diced
- 1 small jalapeño, seeds removed, finely diced
- 1/4 cup of fresh cilantro, finely chopped
- 1 tablespoon of freshly squeezed lime juice
- a pinch of salt and black pepper
Refried Black Beans
- 15 ounces of black beans
- 1 clove of garlic, crushed or finely minced
- a pinch of cumin, onion powder and chipotle seasoning
- 1 tablespoon of butter
Spicy Ground Beef
- 8 ounces of ground beef
- 1 clove of garlic, crushed or finely minced
- 1 tablespoon of tomato paste
- 1 teaspoon of taco or steak seasoning
Assembly
- 6 ounces corn, blistered
- 4 large eggs, cooked to your liking
- 4 tostadas or flour tortillas
- fresh cilantro, finely chopped (garnish)
- queso fresco or cojita, crumbled (garnish)
- sour cream (garnish)
- lime wedges
Instructions
Make the pico de gallo...
- Combine diced tomato, red onion and jalapeño with finely chopped cilantro in a small bowl
- Add 1 tablespoon of fresh lime juice and a pinch of salt and black pepper and set aside for now
Make the refried black beans...
- Add a 15oz can of black beans into a skillet over medium heat
- Add 1 crushed garlic clove and a pinch of cumin, onion powder and chipotle seasoning and bring to a simmer
- Add a tablespoon of butter and mash most of the beans
- Reduce the heat to low and allow the beans to reduce while you prepare the remaining ingredients
Make the spicy ground beef...
- Add 8 ounces of ground beef into a medium skillet over medium heat along with a crushed garlic clove, a teaspoon of taco or steak seasoning and a tablespoon of tomato paste
- Cook until browned and cooked through and then set aside
Make your blistered corn and eggs...
- Blister 6 ounces of corn in a dry skillet and set aside
- Cook your eggs to your liking
Assemble the huevos rancheros...
- Top your tortillas or tostadas with refried black beans, ground beef and eggs
- Top with blistered corn, pico de gallo and sour cream
- Garnish with crumbled queso fresco, fresh cilantro and lime wedges
- Enjoy!
