Japanese Curry Spice Blend

While you could grab a pre-mixed curry blend from the store, mixing up your own can transform a simple curry into something spectacular and thats exactly what we are doing today…

This curry spice blend is earthy, savory and herby. It is my version of Japanese curry spice and it brings a nutty, bitter note to traditional Japanese curry dishes.

You will need….

    • turmeric powder 
    • ground coriander 
    • ground cumin
    • fenugreek 
    • garlic powder 
    • onion powder
    • black pepper 
    • ground ginger 
    • nutmeg
    • ground fennel
    • star anise
    • cardamom
    • cloves
    • cayenne pepper 
    • ground sage
    • dried thyme
    • bay leaves

If you have trouble finding a ground version of any of the spices, simply grind them in a coffee grinder or using a mortar and pestle.

Today, I am putting some fennel seeds, cardamom pods, thyme and a bay leaf into a mortar and pestle to grind them down to a similar texture as the rest of my spices. I like to add a pinch of course sea salt into the mix to help break everything down a little easier.

Once everything is ground down, all you need to do is mix everything well and either use it in todays batch of curry or store it in a cool place in an airtight container until you need it!

Ingredients

  • 2 tablespoons of turmeric powder
  • 1 tablespoon of ground coriander
  • 1 tablespoon of ground cumin
  • 2 teaspoons of fenugreek
  • 2 teaspoons of garlic powder
  • 2 teaspoons of onion powder
  • 1 teaspoon of black pepper
  • 1 teaspoon of ground ginger
  • 1 teaspoon of nutmeg
  • 1 teaspoon of ground fennel
  • 1 teaspoon of star anise
  • 1/2 teaspoon of cardamom
  • 1/2 teaspoon of cloves
  • 1/2 teaspoon of cayenne pepper
  • 1/2 teaspoon of ground sage
  • 1/2 teaspoon of dried thyme
  • 1/2 teaspoon of crushed or ground bay leaves

Instructions

  • Combine everything and store in an airtight container
