Pineapple salsa is one of my all time favorite toppings for any sort of seafood tacos. Whether I am making some crunchy fried cod tacos or barbecue shrimp tacos, scooping some of this sweet, crunchy, refreshing pineapple salsa over each one transforms good tacos into fabulous tacos and who doesn’t love fabulous tacos?
We all do, so let’s get this salsa started…
Begin by gathering 3 cups of diced pineapple (I highly recommend fresh pineapple), 1 diced red sweet bell pepper, 1/2 cup of diced red onion, 1/3 cup of finely chopped fresh cilantro, 1 lime and some tajin seasoning. Tajin is a chili lime seasoning mix that is mild, but full of zesty flavors. It can be found in the regular spice section of your grocery store or near the latin foods in the international section.
Combine the diced pineapple, red sweet bell pepper, red onion and fresh cilantro in a large bowl. Squeeze the juice of 1 big lime over everything, add a few pinches of tajin and toss to combine…
Do a quick taste test and see if more tajin is necessary… I almost always add a little more, but I love bold seasoning, so adjust to your preference. I am confident that you are going to love this pineapple salsa…
For a salsa containing only 6 simple ingredients, this pineapple salsa is absolutely fabulous! The pineapple is sweet and tart, the red onions and sweet bell peppers are super crunchy and fresh and then the lime juice and tajin add saltiness and a hint of spice.
Whether you serve this pineapple salsa spooned over some fish tacos, with a piece of grilled fish, some barbecue chicken, pulled pork or just in a bowl with chips, you are going to love its fresh, bold flavors.
Pineapple Salsa
Ingredients
- 3 cups of fresh pineapple, diced
- 1 red sweet bell pepper, diced
- 1/2 cup of red onion, diced
- 1/3 cup of fresh cilantro, finely chopped
- 1 lime
- 1-2 teaspoons of tajin seasoning
Instructions
- Dice 3 cups of fresh pineapple, 1 red sweet bell pepper, 1/2 cup of red onion and 1/3 cup of fresh cilantro and combine in a large bowl
- Squeeze the juice from 1 lime over the bowl and add 1 teaspoon of tajin seasoning
- Toss to combine and taste to determine whether more lime juice or seasoning is needed
- Serve immediately or chill in an airtight container until ready to enjoy
