Shredded Beef Tostadas

Tostadas are one of the easiest meals to bring together. They are the perfect vessel to transform leftovers and give all of those comforting Latin food feels in no time at all…

Now there are countless ways to make tostadas, but today I am using leftover shredded beef to make one of my favorite super simple weeknight dinners and you are going to love these tostadas.

Let’s get started…

Today, I am using leftover barbacoa, but if you are making these tostadas from scratch, I would love for you to check out my dzik beef or even my honey balsamic shredded beef  would be great here too.

Along with the shredded beef, you will need some tostadas, shredded lettuce, diced tomatoes, salsa, sour cream and lime wedges. With these ingredients, you are just a few minutes away from a very delicious dinner…

Begin by preheating your oven to 400 degrees.

Line a baking sheet with foil or parchment paper (for easy clean up) and arrange your tostadas in a single layer.

I like to start with a layer of shredded cheese then add a thick layer of shredded beef and finish with a little more shredded cheese.

Bake in a 400 degree oven for 8-10 minutes or until the beef is warmed through and the cheese is all melty.

While the tostadas are in the oven, shred up some lettuce, dice up tomatoes and grab some of your favorite taco toppings… sour cream, salsa, pico, hot sauce, lime wedges… grab them all, because tostadas are all about the toppings.

As long as you have tostadas in your pantry (and you always should) and some leftover shredded beef (or any other protein for that matter!) then you are just a few minutes away from a truly delicious meal.

A quick, delicious dinner layering leftover shredded beef, cheese and your favorite toppings over crunchy tostadas.

Ingredients

  • shredded beef, cooked
  • tostadas
  • cheese, shredded
  • lettuce, shredded
  • tomatoes, diced
  • sour cream, salsa or hot sauce (optional)
  • lime wedges (optional)

Instructions

  • Preheat your oven to 400 degrees
  • Line a baking sheet with parchment paper
  • Arrange tostadas in a single layer leaving a little bit of space in between each piece
  • Add a layer of shredded cheese and top with a thick layer of shredded beef
  • Top with more shredded cheese
  • Bake in a 400 degree oven until the beef is warmed thru and the cheese is melted (8-10 minutes)
  • Top with shredded lettuce, salsa and sour cream
  • Serve with lime wedges and a cold drink
