Baked Egg Bites
These little egg bites are delicious, nutritious, high in protein, cost effective and super easy to make. They are a fabulous option for meal prepping breakfast!

- 12 large eggs
- 12 slices of deli meat (turkey, chicken, ham, roast beef or salami)
- salt and black pepper
- shredded cheese (optional)
Preheat your oven to 350 degrees
Lightly spray a 12 cup muffin tin with non-stick baking spray
Press a slice of deli meat into each cavity and crack en egg over each slice
Season with salt and black pepper (optionally, add shredded cheese)
Bake in a 350 degree oven for 12-16 minutes depending on how set you prefer your yolk
Let the egg bites cool and then chill them in an airtight container until you are ready to enjoy
