Baked Oats with Bananas

Moist, tender baked oats with flax seeds, chia seeds, bananas and chocolate chips. The perfect protein and fiber filled breakfast!

Ingredients

  • 2 1/2 cups of old fashioned oats
  • 1/2 cup of ground flax seeds
  • 1/4 cup of chia seeds
  • 2 teaspoons of ground cinnamon
  • 1/2 teaspoon of ground nutmeg (optional)
  • 1 teaspoon of baking powder
  • 3/4 teaspoon of salt
  • 2 1/4 cups of your favorite milk
  • 2 large eggs
  • 1 teaspoon of pure vanilla extract
  • 1/3 cup of pure maple syrup or honey
  • 3 large bananas, diced or mashed
  • 1/2 cup of mini chocolate chips

Instructions

  • Preheat your oven to 350 degrees
  • In a large bowl, combine 2 1/4 cups of your favorite milk, 2 large eggs, 1 teaspoon of pure vanilla extract and 1/3 cup of pure maple syrup or honey and mix to combine
  • Add 2 1/2 cups of old fashioned oats along with 1/2 cup of ground flax seeds, 1/4 cup of chia seeds, 2 teaspoons of ground cinnamon, 1/2 teaspoon of nutmeg (optional), 1 teaspoon of baking powder and 3/4 teaspoon of salt and mix until fully combined
  • Fold in 3 large diced bananas and 1/2 cup of mini chocolate chips until evenly distributed
  • Divide the mixture between 4-5 greased baking dishes
  • Bake in a 350 degree oven for 35-40 minutes or until the oats feel set and springy to a light touch
  • Allow the oats to cool for about 15 minutes before covering and chilling
  • Microwave uncovered for 60-90 seconds to reheat
