Banana Nut Chocolate Chip Mug Cake

A super simple banana bread mug cake that is moist, fluffy, perfectly sweet and ready in 5 minutes!

Ingredients

  • 1 medium overly ripe banana
  • 1 large egg OR 1/4 cup of greek yogurt OR apple sauce
  • 1 tablespoon of vegetable oil
  • 1 tablespoon of honey
  • 1 teaspoon of vanilla extract
  • 1/4 cup of all purpose flour
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of ground cinnamon (or up to 1 teaspoon of chai spice mix)
  • a handful of chocolate chips
  • 2 tablespoons of nuts, chopped (optional)

Instructions

  • Mash a medium overly ripe banana in a large microwave safe coffee mug until smooth
  • Add a large egg (or 1/4 cup of greek yogurt or apple sauce) and mix until smooth
  • Add 1 tablespoon of vegetable oil, 1 tablespoon of honey and 1 teaspoon of vanilla extract and mix until smooth
  • Add 1/4 cup of all purpose flour, 1/2 teaspoon of baking soda, 1/4 teaspoon of salt and 1/4 teaspoon of ground cinnamon and mix until completely combined
  • Fold in a handful of chocolate chips and about 2 tablespoons of chopped walnuts and mix until evenly distributed
  • Microwave on high for 2 minutes or 2 minutes and 30 seconds or until the mug cake is fluffy and the center does not look wet
