Barbecue Glazed Salmon with Pineapple Salsa

The perfect way to enjoy salmon during summer barbecue season. A sweet, sticky glaze brushed over grilled salmon and served with a spicy pineapple salsa.

Ingredients

Pineapple Salsa

  • 1 small pineapple, peeled and diced
  • 1/4 cup of red onion, finely diced
  • 1/4 cup of pasilla or poblano pepper, diced
  • the juice from the pineapple or additional citrus juice (as needed)
  • a pinch of sea salt
  • tajin seasoning (to taste)

Barbecue Glaze

  • 2 parts of your favorite barbecue sauce
  • 1 part honey
  • 1 part pineapple or citrus juice

Salmon

  • salmon filets
  • season salt

Instructions

Make the pineapple salsa...

  • Mix the diced pineapple, red onion and peppers in a bowl and season with sea salt and tajin
  • Add the reserved pineapple juice or additional citrus juice as needed
  • Chill until ready to use

Make the barbecue glaze...

  • Mix 2 parts of your favorite barbecue sauce with 1 part honey and 1 part pineapple or citrus juice (depending on how much salmon you are making)
  • Chill until ready to use

Make the salmon...

  • Dry your salmon with paper towels and season generously with your favorite seasoned salt (I love Lawry's)
  • Sear the salmon on the skin side and then carefully flip
  • Pour the barbecue glaze over the salmon and bring to a simmer
  • Once the glaze has thickened, brush the glaze over the salmon until the salmon is cooked to your desired level
  • Serve with pineapple salsa
