Berry Chia Parfait

Berry Chia Pudding
- 6 ounces of fresh berries
- 2 cups of unsweetened almond milk (or your favorite milk)
- 1 teaspoon of pure vanilla extract
- 1/2 cup of chia seeds
Parfait Assembly
- 2+ cups of greek yogurt (plain, vanilla or berry flavored)
- 2+ cups of fresh berries
- granola or additional chia seeds (for garnishing)
Blend 6 ounces of fresh berries with 2 cups of unsweetened almond milk until smooth and transfer into a bowl
Add a teaspoon of vanilla extract and 1/2 cup of chia seeds and mix until well combined
Cover and refrigerate for a minimum of 4 hours (preferably overnight)
Divide and layer the berry chia pudding with greek yogurt and berries in 4 or 5 airtight dishes
Chill for up to 5 days
