Ingredients

Blueberry "Pup"-cakes

  • 1 large banana, mashed smooth
  • 1 cup of flour (wheat, oat or all purpose)
  • 1/3 cup of vegetable oil
  • 1 large egg
  • 1 teaspoon of baking powder
  • 1 teaspoon of ground cinnamon
  • 1/3 cup of fresh blueberries

Frosting

  • 4 ounces of organic cream cheese, room temperature
  • 1 tablespoon of plain Greek yogurt
  • 2-3 tablespoons of heavy cream (for thinning)

Instructions

  • Preheat your oven to 350 degreesĀ 
  • Combine the ingredients and scoop a heaping tablespoon of batter into a greased mini cupcake tin
  • Bake for 8-9 minutes or until they feel set
  • Allow the cupcakes to cool before frosting
  • To make the frosting, beat 4 ounces of room temperature with 1 tablespoon of greek yogurt and enough heavy cream to develop a creamy texture (2-3 tablespoons)
  • Frost the cupcakes and garnish with tiny bones (optional)
