Blueberry "Pup"-cakes
- 1 large banana, mashed smooth
- 1 cup of flour (wheat, oat or all purpose)
- 1/3 cup of vegetable oil
- 1 large egg
- 1 teaspoon of baking powder
- 1 teaspoon of ground cinnamon
- 1/3 cup of fresh blueberries
Frosting
- 4 ounces of organic cream cheese, room temperature
- 1 tablespoon of plain Greek yogurt
- 2-3 tablespoons of heavy cream (for thinning)
Preheat your oven to 350 degreesĀ
Combine the ingredients and scoop a heaping tablespoon of batter into a greased mini cupcake tin
Bake for 8-9 minutes or until they feel set
Allow the cupcakes to cool before frosting
To make the frosting, beat 4 ounces of room temperature with 1 tablespoon of greek yogurt and enough heavy cream to develop a creamy texture (2-3 tablespoons)
Frost the cupcakes and garnish with tiny bones (optional)
