Candied Apple Oatmeal Cookies

Chewy oatmeal cookies packed with apples, warm spices and crushed heath candy bar pieces.

Ingredients

  • 1 1/2 cups of old fashioned oats
  • 1 1/2 cups of all purpose flour
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of apple pie, pumpkin or chai spice blend
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of baking soda
  • 8 tablespoons of butter, softened
  • 1 large egg
  • 3/4 cup of brown sugar
  • 1 teaspoon of pure vanilla extract
  • 3/4 cup of apples, diced small
  • 1/2 cup of heath candy bar, roughly chopped

Instructions

  • Preheat your oven to 350 degrees and line 2 baking sheets with parchment paper
  • In a large bowl, whisk 8 tablespoons of softened butter with 3/4 cup of brown sugar, a large egg and a teaspoon of pure vanilla extract until combined
  • Add 1 1/2 cups of all purpose flour, 1 1/2 cups of old fashioned oats, 1 teaspoon of ground cinnamon, 1/2 teaspoon of apple pie spice, 1/2 teaspoon of salt and 1/2 teaspoon of baking soda and mix until mostly combined
  • Add 3/4 cup of diced apples and 1/2 cup of roughly chopped heat candy bar and mix until evenly distributed
  • Place evenly sized portions of cookie dough onto parchment lined baking sheets leaving 2 inches in between each
  • Bake in a 350 degree oven for about 10 minutes or until the edges are golden brown and the middles are lightly set
  • Let the cookies cool until firm on cooling racks
  • Store leftovers in an airtight container at room temperature for up to 4 days
