Cantaloupe Chia Pudding

Chia pudding made with the bright, cheerful and naturally sweet flavors of cantaloupe.

Ingredients

Cantaloupe Chia Pudding

  • 2 cups of fresh cantaloupe (about 1/2 of a large cantaloupe)
  • 1 1/2 cups of your favorite milk (I use vanilla unsweetened almond milk)
  • 1 teaspoon of pure vanilla extract
  • 1/2 cup of chia seeds

Garnishes

  • vanilla greek yogurt
  • granola
  • fresh cantaloupe, sliced or diced

Instructions

  • Cut a large cantaloupe in half, discard the seeds and transfer the flesh of half of the melon into a blender
  • Blend the cantaloupe until smooth and transfer into a large bowl 
  • Add 1 1/2 cup of unsweetened vanilla almond milk, 1 teaspoon of pure vanilla extract and 1/2 cup of chia seeds and mix until everything is completely combined 
  • Cover the bowl tightly and chill for a minimum of 4 hours (overnight is best)
  • Divide between small bowls and garnish with a dollop of greek yogurt, some fresh cantaloupe and granola
