Combine 2 cups of all purpose flour, 1/3 cup of natural unsweetened cocoa powder, 2 teaspoons of espresso powder, 2 teaspoons of baking powder, 1/2 teaspoon of baking soda and 1/2 teaspoon of salt in a medium bowl and set aside
In a large bowl, whisk 2 cups of whole milk, 1/2 cup of olive oil, 3 large eggs, 1/3 cup of granulated sugar and 1 teaspoon of vanilla extract until everything is fully incorporated and pale in color
Combine the wet and dry ingredients and fold in 4 ounces of chopped chocolate
Let the batter sit for 5-10 minutes while the waffle maker preheats
Generously spray the preheated waffle maker with non-stick spray and then add the batter and cook until the edges are crisp
Top with whipped cream, chocolate sauce or maple syrup
