Couve à Mineira - Brazilian Garlic Collards

A Brazilian staple of thinly sliced collard greens sautéd in garlic butter.

Ingredients

  • 1 large bunch of collard greens
  • 2 tablespoons of olive oil
  • 2 tablespoons of butter
  • 6 cloves of garlic, finely minced
  • salt and black pepper

Instructions

  • Wash the collard greens, remove the stems and thinly slice the leaves
  • Place a large skillet over medium heat
  • Add 2 tablespoons of olive oil and 2 tablespoons of butter into the skillet and once the butter has melted, add 6 cloves of minced garlic
  • Cook the garlic for about 90 seconds while stirring consistently
  • Add the thinly sliced collard greens and cook for about 5 minutes
  • Season with salt and black pepper and enjoy!
