Creamy Almond Milk Hot Chocolate

A creamy, rich hot chocolate made with almond milk and real chocolate.

Ingredients

  • 2 1/2 cups of unsweetened almond milk (plain or vanilla)
  • 2 tablespoons of sugar (brown, granulated, coconut or palm)
  • 1/2 teaspoon of cornstarch
  • 1 tablespoon of cocoa powder
  • 1 teaspoon of vanilla extract
  • 4 ounces of chocolate (milk, dark or vegan)
  • whipped cream (optional garnish)
  • mini marshmallows (optional garnish)

Instructions

  • Add 2 cups of almond milk into a small saucepan and place over medium heat
  • In a small bowl, combine 1/2 cup of almond milk with 1/2 teaspoon of cornstarch and 1 tablespoon of cocoa powder and whisk until smooth and then add 1 teaspoon of vanilla extract and 2 tablespoons of sugar
  • As soon as the almond milk begins to simmer, reduce the heat to low and add the cornstarch mixture and whisk until completely incorporated 
  • Add 4 ounces of chopped chocolate and whisk over low heat until the chocolate is melted and the mixture has thickened slightly 
  • Serve garnished with whipped cream and shaved chocolate
