Creamy Banana Chia Pudding

A thick, creamy chia pudding with bananas, greek yogurt and granola.

Ingredients

Banana Chia Pudding

  • 2 large overly ripe bananas, mashed smooth
  • 2 1/2 cups of your favorite milk (I use vanilla unsweetened almond milk)
  • 1 teaspoon of pure vanilla extract
  • 1/2 cup of chia seeds
  • 1-2 tablespoons of pure maple syrup (optional)

Garnishes

  • vanilla greek yogurt
  • granola
  • bananas, sliced

Instructions

  • Mash 2 large overly ripe bananas until smooth in a large bowl 
  • Add 2 1/2 cups of unsweetened vanilla almond milk, 1 teaspoon of pure vanilla extract, 1/2 cup of chia seeds and 1-2 tablespoons of pure vanilla syrup (if a sweeter flavor is desired) and mix until everything is completely combined 
  • Cover the bowl tightly and chill for a minimum of 4 hours (overnight is best)
  • Divide between small bowls and garnish with a dollop of greek yogurt, some sliced banana and granola
