Creamy Poblano & Herb Ranch Dressing
A creamy, herby ranch full of fresh poblanos, limes and garlic.

- 1 large poblano pepper, seeds and stem removed
- 1/4 cup of plain Greek yogurt
- 2 tablespoons of mayonnaise
- 1/4 cup of buttermilk (or your favorite milk)
- 1/3 cup of fresh cilantro
- 1 tablespoon of fresh lime juice
- 1 teaspoon of garlic, minced or pasted
- 1 teaspoon of dried dill
- 1/2 teaspoon of dried chives
- 1/2 teaspoon of dried parsley
- 1/2 teaspoon of dried onion flakes
- a pinch of salt and black pepper
- 1-2 tablespoons of pickled jalapeño (optional)
Combine ingredients in a blender or food processor and blend until smooth and creamy
Taste and add additional salt or black pepper, if necessary
Add additional milk to thin, if necessary
Use immediately or chill in an airtight container until ready to use
