Creamy Poblano & Herb Ranch Dressing

A creamy, herby ranch full of fresh poblanos, limes and garlic.

Ingredients

  • 1 large poblano pepper, seeds and stem removed
  • 1/4 cup of plain Greek yogurt
  • 2 tablespoons of mayonnaise
  • 1/4 cup of buttermilk (or your favorite milk)
  • 1/3 cup of fresh cilantro
  • 1 tablespoon of fresh lime juice
  • 1 teaspoon of garlic, minced or pasted
  • 1 teaspoon of dried dill
  • 1/2 teaspoon of dried chives
  • 1/2 teaspoon of dried parsley
  • 1/2 teaspoon of dried onion flakes
  • a pinch of salt and black pepper
  • 1-2 tablespoons of pickled jalapeño (optional)

Instructions

  • Combine ingredients in a blender or food processor and blend until smooth and creamy 
  • Taste and add additional salt or black pepper, if necessary 
  • Add additional milk to thin, if necessary 
  • Use immediately or chill in an airtight container until ready to use
