Enchilada Suizas

A rich and creamy white enchilada recipe that everyone will love!

Ingredients

  • 1 boneless skinless chicken breast, cooked, shredded
  • 6 flour tortillas
  • 8 ounces mozzarella, shredded
  • 1 cup green enchilada sauce
  • 1/2 cup sour cream
  • 1/3 cup heavy cream
  • 1/4 cup cojita, crumbled (garnish)
  • 1/8 cup fresh cilantro, finely chopped (garnish)
  • lime wedges (garnish)
  • additional sour cream (optional garnish)

Instructions

  • Preheat your oven to 350 degrees
  • Whisk together 1/2 cup of sour cream, 1/3 cup of heavy cream and 1/8 cup of green enchilada sauce and set aside
  • Spoon some green enchilada sauce onto a flour tortilla, add shredded chicken and shredded cheese. Roll the tortilla tightly as you would a cigar
  • Place the rolled tortilla onto a baking sheet seem side down and repeat with the remaining tortillas (see photos above)
  • Sprinkle remaining shredded cheese over the tortillas
  • Drizzle the white sauce over top of everything
  • Bake at 350 degrees for 20 minutes or until the cheese is fully melted
  • Garnish with crumbled cojita and finely chopped cilantro
  • Serve with lime wedges and sour cream
