Preheat your oven to 350 degrees
Whisk together 1/2 cup of sour cream, 1/3 cup of heavy cream and 1/8 cup of green enchilada sauce and set aside
Spoon some green enchilada sauce onto a flour tortilla, add shredded chicken and shredded cheese. Roll the tortilla tightly as you would a cigar
Place the rolled tortilla onto a baking sheet seem side down and repeat with the remaining tortillas (see photos above)
Sprinkle remaining shredded cheese over the tortillas
Drizzle the white sauce over top of everything
Bake at 350 degrees for 20 minutes or until the cheese is fully melted
Garnish with crumbled cojita and finely chopped cilantro
Serve with lime wedges and sour cream
