Place a large skillet or wok over medium heat and add a tablespoon of vegetable oil
In a large bowl, mix 4 cups of cooked rice with 3 large egg yolks until combined and set aside
Add 1 large finely chopped shallot and 1 finely diced carrot into the warm skillet and cook for about 5 minutes, stirring occasionally
Add 1 tablespoon of sambal oelek, 2 tablespoons of soy sauce and 2 tablespoons of butter and toss to combine
Add the egg yolk coated rice into the skillet and increase the heat to medium high
Cook, tossing occasionally, for about 5 minutes or until the rice begins to slightly crisp
Mix in 3/4 cup of sweet peas add green onions and enjoy!
