Golden Fried Rice

A simple egg yolk coated rice fried with veggies and a fabulous sauce.

Ingredients

  • 1 tablespoon of vegetable oil
  • 3 large egg yolks
  • 4 cups of cooked rice, cooled
  • 1 large shallot, finely chopped
  • 1 large carrot, peeled, finely diced
  • 3/4 cup of sweet peas, thawed
  • 1 tablespoon of sambal oelek
  • 2 tablespoons of soy sauce
  • 2 tablespoons of butter
  • 2 green onions, finely chopped

Instructions

  • Place a large skillet or wok over medium heat and add a tablespoon of vegetable oil
  • In a large bowl, mix 4 cups of cooked rice with 3 large egg yolks until combined and set aside 
  • Add 1 large finely chopped shallot and 1 finely diced carrot into the warm skillet and cook for about 5 minutes, stirring occasionally 
  • Add 1 tablespoon of sambal oelek, 2 tablespoons of soy sauce and 2 tablespoons of butter and toss to combine 
  • Add the egg yolk coated rice into the skillet and increase the heat to medium high
  • Cook, tossing occasionally, for about 5 minutes or until the rice begins to slightly crisp 
  • Mix in 3/4 cup of sweet peas add green onions and enjoy!
