Ingredients

Greek Salad

  • 2 cups of vine ripened or cocktail tomatoes, chopped
  • 1 small english cucumber, chopped
  • 1 sweet pepper, chopped
  • 1/2 cup of red onion, thinly sliced
  • 1/2 cup of kalamata olives, halved
  • 1/2 cup feta cheese, crumbled
  • leafy greens (optional)

Pita Croutons

  • 2 pita breads, torn
  • olive oil
  • sea salt, garlic powder and black pepper

Instructions

  • Preheat your oven to 375 degrees
  • Tear 2 pitas into bite sized pieces and spread over a baking sheet. Drizzle with olive oil and generously season with sea salt, garlic powder and black pepper. Bake until crisp.
  • Combine the tomatoes, cucumber, sweet peppers, red onion, olives and feta crumbles in a large bowl
  • Add 1/2 cup of Greek salad dressing and toss to combine
  • Optionally serve over leafy greens and top with crisp pita croutons
