Servings: 2
- 3 tablespoons of honey
- 2 tablespoons of fresh lime juice
- 2 tablespoons of soy sauce
- 1 teaspoon of fresh lime zest
- 1 clove of garlic, finely minced or crushed
- 1 boneless skinless chicken breast, halved horizontally
Combine the marinade ingredients in a shallow bowl and submerge the chicken breasts
Cover the bowl tightly with plastic wrap and chill until ready to cook or begin cooking right away
Place a large skillet over medium heat
Add the chicken and cook for 3-4 minutes or until the underside is golden brown and caramelized
Flip the chicken and add the remaining marinade into the skillet
Cook until the chicken is cooked through and the marinade has reduced to a syrupy consistency (reduce the heat, if the sauce begins bubbling too rapidly)
Transfer the cooked chicken to a cutting board, slice and spoon over the reduced marinade
Serve with greens, rice or in tacos or burritos
