Hummingbird Bars

Moist, chewy, perfectly sweet fruit and nut bars with no added sugar, no over processed ingredients and all of the hummingbird cake vibes.

Ingredients

  • 2 cups of apples. peeled and chopped
  • 1 cup of pineapple, chopped
  • 1/3 cup of orange juice
  • 1 cup of banana, mashed
  • 1/2 cup of dried fruit (raisins, cranberries, cherries, apricots)
  • 1 cup of nuts, chopped
  • 3/4 cup of old fashioned oats
  • 3/4 cup of all purpose flour
  • 1/2 cup of coconut shreds
  • 2 tablespoons of a neutral oil
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground ginger
  • 1/2 teaspoon of nutmeg

Instructions

  • Preheat your oven to 350°
  • Place an 8” wide sheet of parchment paper into a greased 8”x8” baking dish leaving a little excess hanging over both sides to help remove the bars later on. Set the dish aside for now
  • Add 2 cups of peeled and chopped apples, 1 cup of chopped pineapple and 1/3 cup of orange juice into a saucepan and place over medium heat
  • Bring the mixture to a simmer and cook for 7-8 minutes or until everything is soft with a jam like consistency 
  • In a large bowl, combine 1 cup of mashed banana, 1/2 cup of dried fruit, 1 cup of chopped nuts, 3/4 cup of old fashioned oats, 3/4 cup of all purpose flour, 1/2 cup of coconut shreds, 2 tablespoons of a neutral oil, 1 teaspoon of ground cinnamon, 1/2 teaspoon of ground ginger and 1/2 teaspoon of nutmeg and mix until everything is well combined 
  • Add the simmered fruit mixture and mix until it is fully incorporated 
  • Press the mixture evenly into the prepared baking dish
  • Bake in a 350° oven for 38-40 minutes or until deeply golden brown
  • Let the bars cool completely before transferring out of the dish and slicing into bars
