Lemon Poppyseed Dressing
A bright, citrusy dressing with nutty poppyseeds and just the right amount of sweetness.

- 1/2 cup of fresh lemon juice
- 1/2 cup of extra virgin olive oil
- 1/8 cup of white wine vinegar
- 1/8 cup of agave or honey
- 1 tablespoon of dijon mustard (plain, honey or spicy)
- 1 tablespoon of poppyseeds
- 1/2 teaspoon of salt
Combine 1/2 cup of fresh lemon juice, 1/2 cup of extra virgin olive oil, 1/8 cup of white wine vinegar, 1/8 cup of honey, 1 tablespoon of dijon mustard, 1/2 teaspoon of salt and a tablespoon of poppyseeds in a blender or food processor or in a bowl with a stiff whisk or frother.
Blend until combined and full of bubbles (20-30 seconds).
Serve immediately or chill in an airtight container.
