Mediterranean Couscous Salad

A flavor packed couscous salad with great texture.

Ingredients

  • 2 cups of pearl couscous, cooked (1 cup dry)
  • 2 cups of vine ripened tomatoes, chopped
  • 1 small English cucumber, diced
  • 1/4 cup of onion, very thinly sliced (white, red or yellow onion)
  • 1/4 cup of feta, crumbled
  • 1/4 cup of fresh parsley, chopped

Mediterranean Dressing

  • 1/2 cup of extra virgin olive oil
  • 2 tablespoons of white or apple cider vinegar
  • 2 cloves of garlic, finely minced
  • 1/4 cup of parmesan, finely grated
  • 1 tablespoon of plain greek yogurt
  • 1 teaspoon of honey
  • 1/2 teaspoon of dried herb mixture

Instructions

  • Cook a cup of dry pearl couscous according to manufacturer’s directions 
  • Once the couscous is fully cooked, add a tablespoon of olive oil and mix thoroughly 
  • Set the couscous aside to cool while you chop the other ingredients
  • Combine the dressing ingredients in a separate bowl
  • Add the chopped tomato, cucumber, onion, feta and parsley along with the dressing into the couscous and mix until everything is evenly distributed
  • Serve warm, room temperature or chilled
