Mediterranean Couscous Salad

- 2 cups of pearl couscous, cooked (1 cup dry)
- 2 cups of vine ripened tomatoes, chopped
- 1 small English cucumber, diced
- 1/4 cup of onion, very thinly sliced (white, red or yellow onion)
- 1/4 cup of feta, crumbled
- 1/4 cup of fresh parsley, chopped
Mediterranean Dressing
- 1/2 cup of extra virgin olive oil
- 2 tablespoons of white or apple cider vinegar
- 2 cloves of garlic, finely minced
- 1/4 cup of parmesan, finely grated
- 1 tablespoon of plain greek yogurt
- 1 teaspoon of honey
- 1/2 teaspoon of dried herb mixture
Cook a cup of dry pearl couscous according to manufacturer’s directions
Once the couscous is fully cooked, add a tablespoon of olive oil and mix thoroughly
Set the couscous aside to cool while you chop the other ingredients
Combine the dressing ingredients in a separate bowl
Add the chopped tomato, cucumber, onion, feta and parsley along with the dressing into the couscous and mix until everything is evenly distributed
Serve warm, room temperature or chilled
