Mediterranean Kofta
Beef and lamb skewers seasoned with garlic, onions, fresh herbs, lemon and loads of warm, inviting spices.

- 2 pounds of ground beef and/or lamb
- 1 medium yellow onion, grated
- 4 cloves of garlic, finely minced
- 1/4 cup of fresh parsley, finely chopped
- 1 1/2 teaspoons of salt
- 1 teaspoon of cumin
- 1 teaspoon of sumac
- 1 teaspoon of dried rosemary
- 1/2 teaspoon of dried oregano
- 1/2 teaspoon of all spice
- 1/2 teaspoon of black pepper
- the juice and zest of a large lemon
Preheat your oven to 425°
Grease an edged baking sheet and set aside for now
In a large bowl, combine the ingredients
Divide the mixture into equal portions and form into long oval’s approximately 1 1/2 - 2 inches thick around metal or soaked bamboo skewers (kofta can be shaped into meatballs or patties, if preferred)
Place the skewers on the lined baking sheet
Bake in a 425° oven for about 15 minutes
Towards the end of the baking time, turn your ovens high broiler on and crisp the outer edges of the kofta (do not leave them unattended!)
Serve with tzatziki sauce
