Peanut Butter Chocolate Chip Granola Muffins

- 3 large eggs
- 1 cup of your favorite milk
- 1/3 cup of pure maple syrup
- 1 teaspoon of pure vanilla extract
- 2/3 cup of peanut butter
- 2 1/2 cups of old fashioned oats
- 1 teaspoon of ground cinnamon (optional)
- 1 1/2 teaspoons of baking powder
- 1/2 teaspoon of salt
- 1/2 cup of pecans or walnuts, chopped
- 1/2 cup of chocolate chips or chopped chocolate
Preheat your oven to 350° and line a 12 cup muffin tin
In a large bowl, whisk 3 large eggs, 1 cup of milk, 1/3 cup of pure maple syrup, 1 teaspoon of pure vanilla extract and 2/3 cup of peanut butter until smooth
Add 2 1/2 cups of old fashioned oats, 1 1/2 teaspoons of baking powder, 1/2 teaspoon of salt and an optional teaspoon of ground cinnamon and mix until just combined
Fold in 1/2 cup of chopped pecans or walnuts and 1/2 cup of chocolate chips until evenly distributed
Divide the batter between the muffin cavities
Bake in a 350° oven for 22-24 minutes
