Peanut Butter Chocolate Chip Granola Muffins

Ingredients

  • 3 large eggs
  • 1 cup of your favorite milk
  • 1/3 cup of pure maple syrup
  • 1 teaspoon of pure vanilla extract
  • 2/3 cup of peanut butter
  • 2 1/2 cups of old fashioned oats
  • 1 teaspoon of ground cinnamon (optional)
  • 1 1/2 teaspoons of baking powder
  • 1/2 teaspoon of salt
  • 1/2 cup of pecans or walnuts, chopped
  • 1/2 cup of chocolate chips or chopped chocolate

Instructions

  • Preheat your oven to 350° and line a 12 cup muffin tin
  • In a large bowl, whisk 3 large eggs, 1 cup of milk, 1/3 cup of pure maple syrup, 1 teaspoon of pure vanilla extract and 2/3 cup of peanut butter until smooth
  • Add 2 1/2 cups of old fashioned oats, 1 1/2 teaspoons of baking powder, 1/2 teaspoon of salt and an optional teaspoon of ground cinnamon and mix until just combined 
  • Fold in 1/2 cup of chopped pecans or walnuts and 1/2 cup of chocolate chips until evenly distributed 
  • Divide the batter between the muffin cavities 
  • Bake in a 350° oven for 22-24 minutes
