Red Velvet Skillet Cookie
A beautiful smokey red skillet cookie with a tender center and chewy edges. Perfect to add chocolate chips, a scoop of vanilla ice cream or use as the base for some super cute holiday decorations.

- 1/2 cup of butter, softened
- 1/2 cup of granulated sugar
- 1/2 cup of brown sugar, packed
- 1 large egg
- 1 large egg yolk
- 1 teaspoon of pure vanilla extract
- 2 teaspoons of red food coloring (or 1 teaspoon of red food gel coloring)
- 1-2 drops of black food coloring (optional - for a deeper red color)
- 1 1/2 cups of all purpose flour
- 1 1/2 tablespoons of cocoa powder (natural or dark)
- 3/4 teaspoon of baking powder
- 1/2 teaspoon of salt
Preheat your oven to 350° and grease the interior of a 9-10” cast iron skillet
In a large bowl, combine 1/2 cup of softened butter with 1/2 cup of granulated sugar and 1/2 cup of brown sugar until creamy
Whisk in 1 large egg plus 1 large egg yolk, 1 teaspoon of pure vanilla extract, 2 teaspoons of red food coloring and an optional 1-2 drops of black food coloring until completely combined
Add 1 1/2 cups of all purpose flour, 1 1/2 tablespoons of natural unsweetened cocoa powder, 3/4 teaspoon of baking powder and 1/2 teaspoon of salt and mix until just combined
Spread evenly into the greased cast iron skillet
Bake in a 350° oven for about 20 minutes or until the edges are set and the top of the cookie looks set
Garnish with vanilla ice cream or chocolate shavings
