Roasted Garlic Herb New Potatoes

Tender little potatoes with crispy skins and fabulous flavors.

Ingredients

  • 1 pound of new potatoes, washed and dried
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, finely minced
  • 2 teaspoons of seasoned salt
  • 1/4 teaspoon of black pepper
  • 2 tablespoons of fresh herbs, finely chopped
  • fresh parsley, finely chopped (garnish)
  • flaky sea salt (garnish)

Instructions

  • Preheat your oven to 375 degrees
  • Add 1 pound of clean, dry new potatoes into a large bowl
  • Drizzle 2 tablespoons of olive oil over the potatoes and add 2 cloves of finely minced garlic, 2 teaspoons of seasoned salt, 1/4 teaspoon of black pepper and about 2 tablespoons of  finely chopped fresh herbs (parsley, rosemary, oregano, thyme or any combination)
  • Toss until all of the potatoes are coated in olive oil and generously seasoned 
  • Transfer the potatoes into a small baking dish and cover tightly with foil
  • Bake at 375 degrees for 35 minutes 
  • Uncover the dish and toss the potatoes around a bit
  • Increase the oven temperature to 450 degrees and cook until the potatoes are fork tender (about 8 minutes)
  • Serve garnished with fresh parsley and flaky sea salt
