Roasted Smoked Sausage Peppers & Potatoes

- 24 ounces of baby red potatoes, halved or quartered
- 3 sweet bell peppers, thick sliced
- 1 large yellow onion, thick sliced
- 24 ounces of smoked sausage, thick sliced
- olive oil
- seasoned salt, garlic powder and onion powder
Preheat your oven to 425°
Place the halved potatoes onto a rimmed baking sheet, drizzle with olive oil and season generously with garlic powder, onion powder and seasoned salt
Roast in the 425° oven for 20 minutes while you prepare the other ingredients
Place the thick sliced peppers, onions and smoked sausage onto a rimmed baking sheet, drizzle with olive oil and season generously with garlic powder, onion powder and seasoned salt
When the potatoes have been in for 20 minutes, reduce the ovens heat to 400° and add the baking sheet with peppers, onions and sausage and roast for another 20-30 minutes or until the potatoes are tender and the peppers, onions and sausage are lightly caramelized
Serve with a small salad and crusty bread
