Roasted Smoked Sausage Peppers & Potatoes

A simple flavorful sheet pan dinner with smoked sausage, sweet peppers, onions and potatoes. Perfect as a mid week meal or a weeks meal prep.

Ingredients

  • 24 ounces of baby red potatoes, halved or quartered
  • 3 sweet bell peppers, thick sliced
  • 1 large yellow onion, thick sliced
  • 24 ounces of smoked sausage, thick sliced
  • olive oil
  • seasoned salt, garlic powder and onion powder

Instructions

  • Preheat your oven to 425°
  • Place the halved potatoes onto a rimmed baking sheet, drizzle with olive oil and season generously with garlic powder, onion powder and seasoned salt
  • Roast in the 425° oven for 20 minutes while you prepare the other ingredients 
  • Place the thick sliced peppers, onions and smoked sausage onto a rimmed baking sheet, drizzle with olive oil and season generously with garlic powder, onion powder and seasoned salt
  • When the potatoes have been in for 20 minutes, reduce the ovens heat to 400° and add the baking sheet with peppers, onions and sausage and roast for another 20-30 minutes or until the potatoes are tender and the peppers, onions and sausage are lightly caramelized 
  • Serve with a small salad and crusty bread
