SouthWest Chicken Salad
A bright, flavorful chicken salad with southwestern vibes. Leftover or rotisserie chicken, black beans, sweet corn, peppers, jalapeños, cilantro and cheese tossed with a light, citrusy greek yogurt dressing that you will love!

- 2 cups of chicken, cooked and diced
- 1/2 cup of black beans, rinsed
- 1/2 cup of sweet corn, rinsed
- 1/2 cup of sweet bell pepper, diced
- 1/2 cup of sharp cheddar, shredded
- 1/4 cup of fresh cilantro, finely chopped
- 2 tablespoons of jalapeño, seeds removed and finely diced
- 1/2 cup of plain greek yogurt
- 1 tablespoon of oilve oil
- 1 tablespoon of lime juice
- 1 teaspoon of honey
- 1 teaspoon of your favorite taco seasoning
- 1 teaspoon of your favorite hot sauce
- salt and black pepper
Combine 1/2 cup of plain Greek yogurt, 1 tablespoon of olive oil, 1 tablespoon of lime juice, 1 teaspoon of honey, 1 teaspoon of your favorite taco seasoning and 1 teaspoon of your favorite hot sauce in a large bowl
Season to taste with salt and black pepper
Add the remaining ingredients and mix until everything is evenly distributed
Enjoy with chips or over greens
Chill leftovers in an airtight container for up to 3 days
