Preheat your oven to 350 degrees
Grease a 9”x9” square baking dish or a 9”-10” oven safe skillet and set aside
Combine 1 3/4 cup of almond milk with 2 large eggs, 1/3 cup of brown sugar, 1/4 cup of coconut oil or melted butter and 1/2 cup of apple sauce in a large bowl
Add 3 cups of old fashioned oats, 1 teaspoon of baking powder, 1 teaspoon of cinnamon, 1/2 teaspoon of nutmeg, 1/2 teaspoon of cloves, 1/2 teaspoon of salt, 1 teaspoon of vanilla extract and 1/2 cup of chopped walnuts and mix until completely combined
Fold in the diced apples
Transfer the mixture into the prepared baking dish
Optional: top with additional apples
Bake in a 350 degree oven for 30-35 minutes or until the oats feels set around the edges
Allow the oats to cool for 5-10 minutes before serving
Optionally, garnish with yogurt and a few slices of fresh apple
