Spiced Apple Baked Oats

Tender, sweet apples baked into oats and seasoned with warm, inviting spices.

Ingredients

  • 1 3/4 cups of almond milk, unsweetened vanilla
  • 2 large eggs
  • 1/3 cup of brown sugar
  • 1/4 cup of coconut oil or melted butter
  • 1/2 cup of apple sauce
  • 3 cups of old fashioned oats
  • 1 teaspoon of baking powder
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of nutmeg
  • 1/2 teaspoon of cloves
  • 1/2 teaspoon of salt
  • 1 teaspoon of vanilla extract
  • 1/2 cup of walnuts, chopped
  • 2-3 medium firm apples, peeled or unpeeled, diced or sliced

Instructions

  • Preheat your oven to 350 degrees 
  • Grease a 9”x9” square baking dish or a 9”-10” oven safe skillet and set aside 
  • Combine 1 3/4 cup of almond milk with 2 large eggs, 1/3 cup of brown sugar, 1/4 cup of coconut oil or melted butter and 1/2 cup of apple sauce in a large bowl 
  • Add 3 cups of old fashioned oats, 1 teaspoon of baking powder, 1 teaspoon of cinnamon, 1/2 teaspoon of nutmeg, 1/2 teaspoon of cloves, 1/2 teaspoon of salt, 1 teaspoon of vanilla extract and 1/2 cup of chopped walnuts and mix until completely combined 
  • Fold in the diced apples 
  • Transfer the mixture into the prepared baking dish
  • Optional: top with additional apples
  • Bake in a 350 degree oven for 30-35 minutes or until the oats feels set around the edges 
  • Allow the oats to cool for 5-10 minutes before serving 
  • Optionally, garnish with yogurt and a few slices of fresh apple
