Spiced Apple Chia Parfaits

Creamy vanilla chia pudding topped with tender, naturally sweet sautéd apples and crunchy granola.

Ingredients

Vanilla Chia Pudding

  • 2 cups of unsweetened vanilla almond milk (or your favorite milk)
  • 1 teaspoon of pure vanilla extract
  • 1/2 cup of chia seeds

Spiced Apples

  • 2 large apples, peeled and diced
  • 1 tablespoon of butter
  • 2 tablespoons of pure maple syrup
  • 1/2 teaspoon of ground cinnamon
  • a pinch of nutmeg, cloves and salt

Garnishes

  • vanilla greek yogurt
  • apple sauce
  • granola

Instructions

  • Combine 2 cups of unsweetened vanilla almond milk with 1 teaspoon of pure vanilla extract and 1/2 cup of chia seeds in a bowl, cover and chill for 4 hours or overnight 
  • Place a large skillet over medium heat and add 2 large peeled and diced apples, 1 tablespoon of butter, 2 tablespoons of pure maple syrup, 1/2 teaspoon of ground cinnamon and a pinch of nutmeg, cloves and salt and cook until the apples have softened 
  • To assemble, layer the vanilla chia pudding, some apple sauce and the spiced apples and garnish with granola 
  • Chill in airtight containers for up to 5 days
