Spiced Pear Quick Bread

A moist, flavorful quick bread filled with grated pears, greek yogurt and warm spices.

Ingredients

  • 1/2 cup of plain greek yogurt
  • 1/2 cup of whole milk
  • 1 large egg
  • 1/3 cup of vegetable oil
  • 3/4 cup of brown sugar
  • 1/4 cup of granulated sugar
  • 1 teaspoon of pure vanilla extract
  • 1/2 teaspoon of almond extract
  • 2 cups of all purpose flour
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground ginger
  • 1/4 teaspoon of ground cloves
  • 1 1/2 cups of pear, peeled and grated

Instructions

  • Preheat your oven to 350°
  • Combine 1/2 cup of plain greek yogurt with 1/2 cup of whole milk, a large egg, 1/3 cup of vegetable oil, 3/4 cup of brown sugar, 1/4 cup of granulated sugar, 1 teaspoon of pure vanilla extract and 1/2 teaspoon of almond extract in a large bowl 
  • Add 2 cups of all purpose flour, 1 teaspoon of baking soda, 1/2 teaspoon of salt, 1/2 teaspoon of ground cinnamon, 1/2 teaspoon of ground ginger and 1/4 teaspoon of cloves and mix until mostly combined 
  • Peel and grate 4 or 5 pears and place 1 1/2 cups of grated pear into a small bowl. Add a tablespoon of all purpose flour in with the pear and toss to combine 
  • Add the flour coated grated pear into the batter and fold until evenly distributed 
  • Transfer the dough into a generously greased and parchment lined 9”x5” loaf pan
  • Bake in a 350° oven for 55-60 minutes or until a toothpick will come out of the center of the loaf clean (cover the loaf lightly with foil if it begins to brown too much towards the end of the baking time)
  • Allow the loaf to cool for 15 minutes on a cooling rack before transferring the loaf out of the pan
  • If you want to add a simple glaze, whisk 1-2 teaspoons of milk into a cup of sifted confectioners sugar and drizzle over the loaf
